Walnut Oatmeal Chocolate Chip Cookies

A healthier spin on the classic oatmeal cookie, these Walnut Oatmeal Chocolate Chip Cookies are the perfect afternoon snack or post-dinner treat. This easy cookie recipe is made with simple ingredients, naturally sweetened, and gluten-free.

Today we are excited to share these super delicious Walnut Oatmeal Chocolate Chip Cookies with you! Mostly because they’re a crazy good, healthier cookie. But also because they’re the very first cookie recipe we are posting to On Our Heals!

We knew our first cookie recipe had to involve chocolate in some way, because, well…chocolate. Rich, dark, and melty, you can’t go wrong with a generous addition of chocolatey goodness in an oatmeal cookie. And paired with roasty, toasty walnuts? Hello, cookie perfection! Walnuts are also great for brain health and give these cookies an omega-3 boost.

These Walnut Oatmeal Chocolate Chip Cookies are made with a base of both gluten-free quick oats and oat flour. The combination of whole oats and ground oats gives the cookies the right density and the perfect texture.

When we began avoiding gluten a few years ago, oat flour was my go-to for gluten-free baking. Although it’s not always the best substitution for a wheat flour, it’s a no-brainer for these cookies.

Where traditional oatmeal cookie recipes use more than a cup of refined sugar, this healthier cookie recipe uses only 1/3 cup of coconut sugar and just a hint of maple syrup. The coconut sugar adds a yummy, caramelley flavour to the cookies, much like a brown sugar would. And the two tablespoons of pure maple syrup help round out the sweetness while ensuring the cookies keep a soft center once they’re baked.

These Walnut Oatmeal Chocolate Chip Cookies are so simple to prepare, with ingredients you probably already have in your pantry. The dry ingredients are tossed together in a big bowl, then combined with the wet ingredients. After the cookies are shaped, they spend a short time in the fridge before they’re ready to bake off!

Just 13 minutes in the oven separates you from a drool-worthy treat. You know the kind: Warm center. Luscious chocolate. Crunchy walnuts. And perfectly caramelized, slightly crisp edges.

So, so good!

We like to store these cookies in a container in the fridge where they keep well for several days. They also freeze really well, which is especially convenient if you have a tendency to constantly reach for the cookie stash (*raises hand*). We’ll often freeze these cookies in dough balls prior to cooking them so we can bake off only as many as we want to eat. Plus, there’s something to be said for having fresh-baked cookies at your fingertips!

If you prefer to freeze them after they’ve been baked for a quick grab-and-go snack, wrap them tightly once they’ve cooled and store them in the freezer for up to three months.

These Walnut Oatmeal Chocolate Chip Cookies are a great pick-me-up snack or evening dessert. They’re also an awesome base cookie if you wanted to swap the chocolate and walnuts for different flavours. Pecans? Dried fruit? Coconut? Turn the oven to 350⁰F and let your imagination run wild.

What’s your favourite oatmeal cookie add-in? We’d love to hear in the comments!
