These Gluten-Free Tigernut Flour Brownies are rich, decadent, and full of chocolatey goodness. Made with tigernut flour and smooth nut butter, these brownies are gluten-free, grain-free, dairy-free, paleo, and incredibly delicious!
Our first experiment with tigernut flour was, as Curt oddly but accurately called it, a “yummy nummy success”. In this particular instance, success was measured in delicious brownies. We set out to make brownies that were decadent, chocolatey, and perfectly sweet, and we gotta say, I think we nailed it!
If you’ve been around for a while, you know one of our favourite recipes (and yours too!) is our Fudgy Coconut Zucchini Brownies. We make them for most special occasions and even made them into our wedding cake! The zucchini brownies are SUPER rich and fudgy, so this time, we wanted to make a brownie that was a little more traditional. These Gluten-Free Tigernut Flour Brownies hit the mark big time and we’re totally diggin’ em!
What are Tigernuts?
Well, for one, they’re not actually nuts. Tigernuts are tubers, they look kinda like a wrinkly chickpea, and they have a slightly sweet and nutty flavour. Tigernuts are also gluten-free, AIP-friendly, and paleo.
There are a lot of recipes in the paleo world that use almond flour, but due to food sensitivities, almonds and almond flour are something we don’t have in our home. But Tigernut flour has a very similar texture and density to almond flour, so it was the perfect ingredient to use in these grain-free brownies.
You’re going to love these brownies because:
- They have amazing flavour and honestly, they taste like traditional brownies!
- They have the ultimate brownie texture: a lil’ bit fudgy and a lil’ bit cakey.
- They’re perfectly sweetened. You get some sweetness from the tigernuts, the dark chocolate, and the addition of a little coconut sugar.
- They’re made with just eight ingredients!
- They are gluten free, grain-free, refined sugar free, vegan, and paleo.
- They’re super quick and easy to make!
What you need
The list of ingredients you need for these brownies is short and simple:
- Tigernut flour, a slightly sweet (and not actually made of nuts) flour
- Nut butter. We’ve been using hazelnut butter for this recipe but you can use another nut butter you love; we’ve also tested them with cashew butter
- Dark chocolate for smooth richness – if you want the brownies to be paleo, choose a dark chocolate that is sweetened with coconut sugar
- Coconut sugar for sweetness
- Cacao powder for more chocolatey goodness
- Baking soda for a little lift
- Sea salt to bring out the flavours
- Ground flaxseed and water to make a flax egg (if you tolerate them, you could probably substitute a real egg as well!)
