Now that we are approaching summer and fresh berries are coming into season, we’ve got blueberries on the brain! Blueberries are not only delicious, they’re incredibly healthy. They’re loaded with nutrients and vitamins, super high in antioxidants, and amazing for brain health.
Fresh or frozen blueberries?
I think we can all agree that fresh wild or organic blueberries would be considered the gold standard, but in this recipe, we’re opting for frozen.
Here’s why:
- Fresh blueberries are the perfect addition to your bowl of oatmeal or granola.
- Fresh blueberries are an easy and delicious snack.
- Fresh blueberries are amazing in a salad. One one of our favourite summery recipes is this Blueberry Lime and Mango Quinoa Salad. Have you tried it yet?
So why would we choose frozen blueberries over fresh for this recipe? The simple answer: the blueberries in this sauce are cooked.
If we can get our hands on fresh blueberries, it’s a treat. They’re always a little more expensive, they’re only around for a short time, and let’s face it, fresh berries taste like summer! For that reason, we prefer to eat fresh blueberries as is, in all their summer glory. Because the blueberries in this recipe are cooked, we are going with frozen organic blueberries for this Easy Lemon Blueberry Sauce.
You’re going to love this Easy Lemon Blueberry Sauce because:
- It’s super simple to make!
- It has only three ingredients.
- There is no added sugar.
- It’s gluten-free, dairy-free, paleo, and vegan.
- It’s super versatile! Add it to your oatmeal, use it like jam on your toast, dollop it on your pancakes, and it might even be delicious on meat like chicken or pork chops! (We’ll try it and report back!)
Three Simple Ingredients
Frozen blueberries, fresh lemon juice, and a little tapioca starch is all you need to make this super simple summery sauce. The blueberries burst and release their juices when they’re heated on the stove, the lemon juice adds brightness to the flavour, and the tapioca starch gives the sauce just the right amount of thickness. It’s so, so yummy!
