Cashew Honey Latte

This delicious Cashew Honey Latte will bring your favourite cafe right into your home. Dairy-free and super easy to make, this homemade latte is the perfect drink to enjoy on a relaxing Saturday morning or anytime you need a little pick-me-up.

This Cashew Honey Latte used to be my special weekend treat. But now that Curt and I are both working from home for the time being, I have a feeling it may creep into my daily routine. You know what? I’m not really all that sad about it because it’s so, so good!

We are not huge coffee drinkers in this house (Curt doesn’t drink coffee at all), but I do enjoy the flavour and warmth of a specialty coffee once in a while. I wanted that coffee house taste at home, so I set out to make a truly delicious, dairy-free latte in our kitchen. This was the result: a yummy Cashew Honey Latte that can be enjoyed from your favourite mug while wearing your cozy pyjamas.

This Cashew Honey Latte is:

and you only need a few ingredients (woo!).

For the creaminess: Soaked cashews. The cashews and hot water make a rich and delicious cashew milk base for the latte. The best part? It doesn’t need to be strained through a nut milk bag!

For the deep coffee flavour: ½ a cup of strong coffee or a couple shots of espresso will do the trick. We don’t have a traditional coffee maker or an espresso machine, so we use a small stovetop moka pot and it’s perfect for this latte.

For the sweetness: Raw honey. A delicious natural sweetener, raw honey contains healthy enzymes, vitamins, and minerals. Raw honey is also antibacterial which is why it is so often recommended when you have a sore throat. To sweeten your latte just right, add some of your favourite raw local honey.

This easy homemade latte is so simple to make. Just add all the ingredients to your high-speed blender (we love our Vitamix) and blend it up!
